Donut Worry 'Bout A Thing..



So let's talk a little bit about the best little things in life...nope we are not talking about kids (although they really are the best little things in life...even when they are not...they still totally are) we are talking about the gift of the culinary gods (actually devils).

The sweet, fluffy, rounds of yummy baked or fried dough drenched and dripping in sugary glaze or gooey chocolate perfection...the deliciously perfect dessert that can make even the worst days better..like a sweet doughy hug.



Ladies and gentleman over the past year we have posted a few pictures of our homemade donuts and the response was unreal.  We found out that our love of all things sugary and doughy is shared heavily amongst our readers... see we really are a perfect fit.



Before we go on can we just wax poetic about how incredible this food is?  I mean what other item can be a breakfast item, sweet treat or dessert?  Ok..yes..pizza is too but donuts are so much more fun!  Like a party in every bite...




Now in order to make donuts you need 1 of 3 things...

- A deep fryer (we bake ours for health reasons and who the F has a deep fryer and if you do what a pain in the A to use it..)

OR

- A donut pan (and an oven)

OR

- A donut iron...much like a waffle iron only way cuter!  We love this one for so many reasons...



Oh and LOTS of sprinkles!!!  Michaels crafts, Whole Foods, Target are all great places to start the sprinkle extravaganza.



Ok...let us begin.  Here are our top 3 recipes for the sweet lil guys


Vanilla Donuts go here for the recipe!


Chocolate Donuts
For the donuts
  1. 3/4 cups all purpose flour
  2. 1/2 cup white sugar
  3. 1/4 cup cocoa powder
  4. 1/2 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 5 tablespoons vegetable oil
  7. 1/2 teaspoon vanilla extract
  8. 1/2 cup water
For the frosting
  1. 1 cup powdered sugar
  2. 2 tablespoons butter or dairy free butter - melted
  3. 2 tablespoons milk or unsweetened almond milk
  4. 1/4 cup cocoa powder
  5. 1/4 teaspoon vanilla

For the donuts
  1. Preheat oven to 350 degrees. Spray your donut pan with nonstick spray.
  2. Stir together flour, sugar, cocoa powder, baking soda and salt.
  3. Add oil, vanilla and water and continue to stir untl smooth.
  4. Pour into donut pan and bake 10-12 minutes.
For the frosting

  1. In a bowl using a hand mixer, mix together powdered sugar and butter until creamed well.
  2. Add milk, cocoa powder and vanilla and continue to mix until creamy and well combined.
  3. Once donuts are cool, dip them into the frosting to cover the tops.

Now for the ones that have every friend we have begging for more...(and we promise we will deliver soon!).....


Dry Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. (scant) nutmeg
1 dash cinnamon
Wet Ingredients:
1/2 cup soy milk
1/2 tsp. apple cider vinegar
1/2 tsp. vanilla extract
Egg replacer for 1 egg (or 2 Tbsp. cinnamon apple sauce)
¼ cup vegan margarine
  • Preheat the oven to 350ºF.
  • In a large bowl, combine the dry ingredients with a whisk to mix thoroughly. Combine the wet ingredients in a small sauce pan over medium-low heat and mix until the margarine is just melted. This mixture should be just slightly warm to the touch.
  • Add the wet mixture to the dry and mix until just combined. It should form a very soft dough.
  • Using a tablespoon, scoop dough into an ungreased nonstick doughnut pan. Smooth out the top of each dough with your fingersthis will make for more even, prettier doughnuts but isn’t crucial.
  • Bake for 12 minutes. They should not be browned on top, but a toothpick will come out clean. Invert the hot pan over a cutting board or cooling rack to release the doughnuts. Allow to cool completely before decorating.
  • Top with a glaze, melted chocolate, and/or sprinkles if desired.


Ok last thing... I love to double glaze mine!  Glaze is crazy easy and fun to play with.   
To make a great easy glaze-
Powdered Sugar- 1-2 cups depending on your double or single glaze desires
Real Vanilla Extract- 1/2 - 1 teaspoon
Soy Milk- 2 tablespoons (add more to desired thickness)
Mix with a wire whisk or hand mixer and dip, dip, triple dip away!
Apply sprinkles, coconut, mini chips, sugar and cinnamon...or what ever makes you happy just after dipping to encourage a strong bond between toppings and glaze

Can't get enough donuts?  Neither can we.
